Production Method
The fine powder obtained by drying the tubers of various plants of the genus Amorphophallus, peeling, slicing, drying, crushing and sieving is called "konjac flour", with a yield of about 60% to 80%.
D-pyranose glucose and D-pyranose mannosyl linked by β-1,4 glycosidic bonds account for 70% to 80% of the total dry matter, and the particle diameter is about 0.15mm. Since the surface of the particles is covered with non-glucomannan, it affects the water absorption and has low gelling ability.
For this reason, ethanol, petroleum ether, etc. can be used for physical modification to improve water solubility, dissolution viscosity, dissolution rate and other properties. The tubers are sliced and crushed, immersed in ethanol, dried under reduced pressure at 60°C, degreased with petroleum ether, dissolved in sodium hydroxide solution and filtered, the filtrate is neutralized with hydrochloric acid and extracted with lead acetate, the filtrate is taken, hydrogen sulfide is passed through to remove lead ions, ethanol is added for precipitation, and the product is dried with acetone after centrifugation. The product is first a crude product, then dissolved with sodium hydroxide, filtered, neutralized with hydrochloric acid and concentrated, precipitated with ethanol, centrifuged and dried with acetone to obtain a fine product called "konjac flour".
