Properties

The chemical name is asparagine phenylalanine methyl ester, which is the methyl ester of the natural amino acids, L-aspartic acid and L-phenylalanine dipeptide. Under strong acid or alkaline conditions, methanol is produced by hydrolysis. Under more stringent conditions, the peptide bonds will also be hydrolyzed to produce free amino acids.

It will hydrolyze under high temperature or alkaline conditions, so it is not suitable for high-temperature baked foods. However, it can be combined with fat or maltodextrin to improve heat resistance. Its stability in water is mainly determined by pH value. At room temperature, it is most stable when the pH value is 4.3, and the half-life is about 300 days. When the pH value is 7, its half-life is only a few days. However, the pH value of most beverages is between 3 and 5, so it is very stable when added to beverages.
