What is Polylysine?

Polylysine Powder is a linear polyamino acid formed by connecting L-lysine through amino-tendon bonds, produced by microorganisms using biotechnology. This substance was originally found to have antibacterial activity and was therefore used as a preservative in the food industry. It is a natural food preservative with excellent antibacterial effects and can effectively inhibit the proliferation of various microorganisms. For example, it is used in baked goods and cooked meat products to prevent food spoilage. In addition, it has the characteristics of high water solubility, ability to maintain activity in high temperature environments, and good antibacterial properties over a wide pH range.

Mechanism of Action
