What Is Trehalose?

Trehalose is a non-reducing disaccharide. It is mainly found in molds, algae, dried yeast, ergot, etc., and can also be synthesized artificially. It has broad application prospects in food, health products, cosmetics, medicine, and agriculture.

Trehalose is more stable than sucrose and does not undergo the Maillard reaction when mixed with amino acids and proteins under heating conditions. Its solubility is about two-thirds that of sucrose, its osmotic pressure is the same as disaccharides such as sucrose and maltose, and its sweetness is only about 45% that of sucrose, leaving a refreshing aftertaste. Trehalose containing two molecules of crystallization does not exhibit hygroscopicity, while anhydrous trehalose crystals are highly hygroscopic; the latter can be used as a desiccant.

Features

1. Mild Sweetness

Trehalose Powder has approximately 45% the sweetness of sucrose, offering a mild and refreshing sweetness that doesn't easily mask the original aroma and flavor of food.

2. Helps Maintain Food Texture and Structure

Trehalose can be used in starchy and protein-rich foods. In rice and flour products, baked goods, and frozen foods, it helps reduce starch retrogradation and helps maintain protein structure and product texture.

3. Heat and Acid Resistance

Trehalose has high chemical stability, maintaining good stability even under certain acidic and heating conditions. Therefore, it is suitable for beverages, baked goods, and other heat-processed food systems, providing a wider processing range for formulations.

4. Low Hygroscopicity

Trehalose has low hygroscopicity, maintaining good stability even in high humidity environments. This helps reduce problems such as clumping and texture changes caused by moisture absorption.

5. Improves Flavor

Trehalose has a mild sweetness and can be blended with other sweeteners to adjust the overall sweetness profile.

6. Suitable for Lipid-Rich Foods

In oily foods, trehalose can be used as a formulation aid, helping to maintain the product's flavor profile during storage.

7. Energy Supply

Like other digestible sugars, trehalose provides energy, approximately 4 kcal per gram.

Health Function

Nutrition supplement: It is rich in vitamins, minerals, dietary fiber and other nutrients. Appropriate intake can supplement various nutrients needed by the human body.

Provide energy: It can be decomposed into two glucose molecules, thereby providing the necessary energy for the human body.

Promote intestinal healthStrengthen physical fitness: It can accelerate the regeneration and reproduction of human tissue cells, which helps to strengthen physical fitness.

Prevent osteoporosis: Some active ingredients contained in it can inhibit the decomposition of collagen in the human body, and at the same time accelerate the body's absorption and utilization of various nutrients such as trace elements calcium and phosphorus, which has a preventive effect on osteoporosis, which is common in middle-aged and elderly people.

Protect teeth: It is not easily decomposed by oral bacteria, nor does it produce acidic substances. It has low corrosiveness to teeth and helps prevent caries and bad breath.

Beauty: The nutrients contained can stabilize the cell membrane in human cells, combine with proteins in the human body, and produce natural anti-drying ingredients, so that the skin remains tender and smooth, and wrinkles and spots are reduced.

Promote intestinal health: It can produce short-chain fatty acids such as butyric acid and propionic acid through intestinal fermentation, which have a nutritional effect on intestinal cells and also contribute to the growth of probiotics. It can regulate the balance of intestinal flora and improve intestinal health.

Application

Food

Trehalose Powder is widely used as a natural sweetener, preservative and moisturizer. It has good stability and low hygroscopicity, which can extend the shelf life of food and maintain the flavor and texture of food. In addition, it can improve the taste and aroma of food and prevent food from browning and aging.

Cosmetics

In the cosmetics industry, as a moisturizer and antioxidant, it can improve the moisture content and elasticity of the skin and reduce oxidative damage to the skin. Its moisturizing, radiation protection and body odor suppression properties make it widely used in daily chemical products such as creams, masks, lipsticks, and mouth fresheners.

Medical field

It can be used as an excipient for drugs to improve the taste and stability of drugs, and as an intestinal protectant and antioxidant to protect the health of the body. Stability and non-cariogenicity make it an ideal ingredient for oral care products and help drug absorption and utilization.

Application

In Which Scenarios Is Trehalose Suitable As A Substitute For Sucrose?

Enterprises should not blindly replace sucrose with trehalose during processing. Instead, they should adapt and combine it according to need, taking into account product processes, taste requirements, and cost budgets.

Scenarios suitable for partial trehalose replacement:

Products that require freshness preservation, color protection, extended shelf life, and improved taste should prioritize partial sucrose replacement. Suitable product categories include baked goods, frozen rice and noodle products, light-colored fruit and vegetable drinks, meat products, and snacks. It can effectively solve problems such as product spoilage, discoloration, and cloying taste, significantly improving product quality and appearance.

Scenarios unsuitable for trehalose replacement:

Products that rely on caramel flavor, coloring effects, and strict cost control are not recommended for replacement. For example, products requiring high-temperature baking for coloring, those with high oil and sweetness content, and low-cost mass-market essential foods may lose the caramel flavor of sucrose, reduce product flavor, and increase production costs.

A better solution is to use a combination of trehalose and sucrose, which can retain the product's flavor characteristics while achieving quality improvement and cost control.

FAQ

Q1: Can trehalose completely replace sucrose?

It needs to be evaluated based on the target sweetness, taste, solids content, and specific food system. In practice, it can be blended with sucrose or other sweeteners.

Q2: Is trehalose suitable for low-sugar products?

Trehalose is still a sugar, therefore it cannot be equated with "sugar-free" or "zero-sugar."

Q3: Can trehalose be used in solid beverages?

Yes. It can be used in nutritional powders, solid beverages, and other powdered foods.

Q4: Can you provide trehalose samples and COAs?

Yes, we can provide product specifications, COAs, and sample according to customer needs.
